Ardi Guji is a naturally processed coffee grown in the Guji Zone of southern Ethiopia, known for its vibrant fruit-forward profile. Produced by Biru Bekele at his dry mill station in the town of Odo Shakiso, this coffee is cultivated at an elevation of 2,182 meters in a sub-tropical climate, using the Heirloom variety. The natural process involves sun-drying the cherries for 12-18 days, resulting in a rich, complex flavor profile. Tasting notes include strawberry, stone fruit, and milk chocolate. Ardi Guji is classified as Grade 1, signifying high quality with minimal defects.
Guji, a once-remote part of the Sidamo region, is now recognized for producing some of Ethiopia’s finest coffees. Its rugged landscape and difficult-to-access farms, where coffee is sometimes transported by horses, contribute to the distinct character of the beans. The coffee is branded as "Ardi" by the Keffa Coffee importer, who ensures consistency in flavor by sourcing beans with similar taste profiles each harvest. The natural processing method enhances its bright and fruity qualities, making it ideal for a light roast, just after the first crack, to preserve its delicate balance of sweetness and acidity without turning sour or bitter.
